roasted golden beet and red lentil hummus

serves: 1

ingredients:

2 large organic golden beets

1 cup cooked organic red lentils 

4 tbsp avocado oil

2 tbsp tahini 

1 tsp cumin

2 tsp The Gut Lab Super Q superfood shaker

4 cloves garlic 

juice of half a lemon 

salt to taste 

method: 

  1. chop golden beets into 1 inch squares. toss in avocado oil and himalayan salt. roast at 400 for 35 minutes or until soft

  2. soak lentil overnight, cook 1 cup of lentils according to package 

  3. combine cooked golden beets, cooked lentils and all other ingredients to a food processor or high-speed blender 

  4. blend until the ingredients reach a thick smooth consistency

  5. enjoy with you favourite veggies and gluten free crackers (we love Mary’s!)
